Spring Greens Chow-Chow Salad

This salad is great when you live alone as it keeps in the fridge for three to four days. Make it up with four cups of any vegetables you fancy and enjoy for four days without any more prep. Good for the digestion. I also chop up ½ an apple on top when I serve it and a handful of a nut/seed mix (sunflower seeds, pumpkin seeds, almond or whatever you want). This salad gives you good protein, vegetables and fruit all in one bowl.

Dice four cups of any vegetable you fancy in ½ inch pieces. (use any combination of zucchini, cucumber, green bell pepper, green cabbage, snow peas, asparagus, scallions, celery, green beans, etc.)

ADD:
1 Tbsp. oil
1 Tbsp. cider vinegar
1 Tbsp. lemon juice
1/8 tsp. salt
Sometimes I add a dash of Soya Sauce
fresh parsley if you like

Place all ingredients in a large bowl. Toss well. Cover and store in refrigerator. You can make a light meal of it by adding some chicken or ½ cup of beans. Enjoy.

Wheat Germ Cookies

My family loved these cookies. They are simple and I always had to make a double batch.

1 cup butter
1cup brown sugar
1 cup wheat germ
1 cup flour
2 cups oatmeal
½ tsp salt
1 tsp baking soda dissolved in ½ cup warm water
Mix together in order and roll into balls. Flatten balls with fork
Bake 10 min. at 350° oven
